Greek Lentil Soup

Need an idea for supper tomorrow evening?


It's souper easy!


I confess, I don't always rinse and sort all my beans,


but I always rinse and sort lentils!
yuck - what is that?



The easy part - dump everything in the pan and add water!



We served this soup with cornbread last week, but next time I'll have warmed pitas or arabic flat bread.


Little Builder doesn't like the visible onions, and had to be bribed with no more cornbread until you eat some soup. The toddler, however, gobbled it up.

    And, my youngest doesn't like visable onions either.

  4. Mimi - I have been known to saute the onions first, then purree them with some water, then add them. Really he should just get used to it, but sometimes I don't want to deal with the complaints....

    Elizabeth - I am horribly embarassed to admit that I used Jiffy Corn Muffin mix, and followed the package directions, except subsitute soymilk for milk and egg replacer for eggs. I have a much better vegan cornbead recipe that I'll post sometime, but this does us in a pinch. We also LOVE cornmeal pancakes made from this mix, and it is cheap.

  5. I like lentils...but the rest of the family haven't warmed up to them yet. I am going to try this recipe anyway! If they are hungry, they'll eat! Thanks for the recipe...
