Breakfast Burrito Experiment

During the fast, I would like to have something with a bit of protein for breakfast, and oatmeal, malt-o-meal, and polenta are good for warmth but wimpy for protein. I suppose a glass of soy milk would bulk up a porridge breakfast. However, I like to experiment, I like to cook, and we have 6 weeks of breakfasts, so...

I would like to make something like these:

I could make them and freeze them, pulling one out to microwave on a hurried morning.


I don't feel bound by these ingredients, but it's a start. If you have advice on this process, I'd be glad to hear it.

What about you? What is your go-to breakfast during a fast?

  1. I tend to eat a lot of fruit and some crackers with peanut butter and jelly. It is not as exciting as the breakfast burrito, but it works. I love this idea! We always need some new menu ideas! :-)

  2. I like my almond milk/banana/cocoa/peanut butter smoothies. With a piece of fruit, it makes a pretty good breakfast.

  3. My easy fasting breakfast is homemade granola with almond milk. I put in lots of dried fruit and nuts. These burritos look like they'd be good, and a great item to make. I have to make my own spelt tortillas, but they do freeze well.

  4. Do you feel comfortable using a meat-substitute like TVP (I've heard some don't like to use it for a fast)? It is made entirely from soy and you can usually buy it in bulk and after you reconstitute it you can season it like ground beef.


    My standard breakfast is coffee, but I'm not sure what I'll have during the fast.

    Cobweb, I do use TVP in chili or spaghetti sauce or things that have to simmer for a long time, so it loses its weird flavor and soaks up the flavor of the sauce.

  6. Have you ever had Amy's refried beans? I get them by the caseload (or two - but, then, I have 10 kids...) from my food co-op. They are very yummy and probably pretty close to the ingredients on her burritos but would stretch a lot farther and cost a bit less to open a can of her beans and plop them into a tortilla. We add cheese to ours and lettuce and sour cream if it's an evening or lunch time meal.

  7. I would recommend just preparing the filling, putting it in the fridge and then stuffing a tortilla with it in the morning.

    black beans
    refried beans
    kidney beans
    tomatoes
    jalapenos
    green bell peppers
    corn
    onion
    whatever spices you like

    A combination of any of the above ingredients should do the trick. Honestly, my main fasting meal right now is kidney beans cooked in diced tomatoes with garlic and onion. I just make a weekly batch of that and heat it up in the microwave for a quick, protein packed meal. It's quite tasty.

    Those ingredients sound good. In fact, I just remembered that one of my favorites from my cheap college days was canned spinach and refried beans wrapped in a tortilla, which is also easy.

    I'm a vegetarian, and I've had those Amy's breakfast burritos. Seems like no matter how long those things stay in my freezer, they still taste good! When I've done vegan meals in the past, homemade granola with vanilla soymilk was a favorite for breakfast. Walnuts, pecans, raisins, dates and oats. It packed the energy! All the best to you!

  10. Mmmmm...I love spinach!

    Try this out - it's not protein packed but it's an easy, tasty side dish. Sometimes, I even eat it for a snack.

    Raw spinach mixed with hummus.

    Eat with a fork and enjoy.

    I prefer the garlic hummus myself. Yummy!
